Avocado Toast with Paprika Sprinkled Eggs

This is hardly a recipe but it’s one of my go-tos so I’m putting it up anyways: avocado toast with hard-boiled eggs and paprika. This one’s got the creamy, the crunchy, the salty, and the smoky all going on in one bite.
The avocado is mashed with a pinch of salt and a squeeze of vitamin C rich lemon juice. I like it very lemony but you can add less to your taste preference.


The avocado mash then gets slathered onto toasted sourdough and crowned with sliced hard-boiled eggs. Sprinkle on some paprika and a little everything but the bagel seasoning and boom—breakfast, lunch, or snack is handled.
It’s fast, it’s filling, and yes, it looks great on a plate if you’re the type to snap a pic before taking a bite. No judgment. It’s also nutrient and protein packed.
Nutrition Notes
Eggs are protein bombs (6g per large egg, to be exact). They’ve got all the essential amino acids, plus B12, choline, and a bunch of brain-loving nutrients.
Avocados bring the good fats. Heart-healthy monounsaturated fats, fiber, potassium, and antioxidants.

Sourdough bread provides healthy carbs and good for your gut prebiotics. Because this bread is fermented, it’s easier on your digestion and has a lower glycemic index than white bread. You can easily swap this for your favorite whole-grain or gluten free bread.

Avocado Sourdough Toast with Eggs and Paprika
Equipment
Ingredients
- 1 avocado, medium size and ripe
- pinch salt
- 1 tbsp lemon juice, about half a lemon, use more or less to taste
- 2 hard-boiled eggs, sliced
- 2 slices sourdough bread, ( or insert your favorite bread here)
- pinch paprika
- pinch everything but the bagel seasoning, for sprinkling on top
Instructions
- Toast the sourdough slices until golden and crisp.
- In a small bowl, mash the avocado with lemon juice and a pinch of salt until creamy but still a little chunky.
- Spread the mashed avocado evenly over the toasted bread.
- Top each slice with sliced hard-boiled eggs and sprinkle with dusting of paprika and everything but the bagel seasoning.
- Serve immediately while the toast still has that perfect crunch.
