about half a lemon, use more or less to taste

hard-boiled eggs

sourdough bread

paprika

everything but the bagel seasoning

for sprinkling on top
Instructions
Toast the sourdough slices until golden and crisp.
In a small bowl, mash the avocado with lemon juice and a pinch of salt until creamy but still a little chunky.
Spread the mashed avocado evenly over the toasted bread.
Top each slice with sliced hard-boiled eggs and sprinkle with dusting of paprika and everything but the bagel seasoning.
Serve immediately while the toast still has that perfect crunch.
