For the Salad
- 4 cups mixed greens
- 1 apple, thinly sliced, I used Pink Lady
- ½ cup blackberries
- ¼ cup pomegranate arils
- ¼ cup chopped walnuts, toast for extra crunch
- 2 ounces goat cheese, crumbled
Maple Tahini Dressing
- 3 tablespoons tahini
- 1½ tablespoons pure maple syrup
- 1½ tablespoons apple cider vinegar
- 1-2 tablespoons warm water, add more as needed to thin
- Pinch of salt
- Freshly cracked black pepper, to taste
Instructions
- In a small bowl or jar, whisk together tahini and apple cider vinegar until it thickens. Slowly whisk in warm water until smooth and creamy. Stir in maple syrup, salt, and pepper. Adjust with a splash more water if needed.
- Place greens in a bowl and top with apple slices, blackberries, and pomegranate arils, walnuts and crumbled goat cheese.
- Serve immediately with dressing on the side or mixed in.
