This strawberry peanut butter protein smoothie is basically a peanut butter and jelly sandwich in disguise. Strawberries give it the “jelly” flavor, peanut butter (or PB2) covers the “PB,” and the cauliflower quietly plays the role of bread by bulking it up without stealing the spotlight.

It’s creamy, fruity, and filling enough to pass as breakfast, lunch, or the 3 p.m. snack that saves you from raiding the pantry. With protein powder, chia seeds, and that nutty kick, it’s a balanced blend that tastes way more like a treat than a health drink.

Equipment

Ingredients

  • 1 cup milk, dairy or non-dairy
  • 1 scoop protein powder
  • 1 tablespoon PB2
  • 1 tablespoon chia seeds
  • ½ cup strawberries, frozen
  • ½ cup riced cauliflower, frozen

Optional Toppings:

  • peanut butter, hemp seeds, sliced strawberries etc.

Instructions

  • Add all ingredients to a blender and blend on high until smooth and creamy. Add toppings, if desired.

Notes

Feel free to add your favorite sweetener if you like the smoothie a little sweeter.  I like stevia/allulose.
